Heavy duty bubble-esque smoothie


I'm taking my gram to the doctor today so I wanted a very heavy filling smoothie and here is what I created:

  • Frozen banana
  • Spirulina manna
  • Almond butter
  • MSM
  • Flax seed meal
  • Stevia
  • Vanilla soy milk (and water because I ran out)
  • And the secret ingredient------> Dessert Quinoa (ab out a 1/4 cup worth)

I made the dessert quinoa last night: Just cook it with vanilla soy milk, vanilla extract, and some stevia and ba-da bing, ba-da BOOM! Yum. 


And even though my day started, reluctantly, at 630 here is what I have to make my day ever so beautiful. The sun is shining and I'm feeling good. I'm down to 127 lbs. Slow and steady wins the race!

Parsley-riffic



Parsberry (Parsley-blueberry) Smoothie:

1 cup of vanilla soy yogurt
1/2 frozen banana
Huge handful of frozen blueberries
Couple handfuls of parsley
Tsp. MSM
Vanilla extract
Water 
 Serious yumminess. It is refreshing and filling


Another version I made this morning was:

1 red banana
Frozen strawberries
chia seeds
parsley
flax seed meal
water

Start of summer quarter..

It goes like this:  it may have been full of poop but it went darn well. The poop is referring to my handsome and precocious 16 month old starting off my first day of practicum by pooping in the bathtub while I was trying to get ready and then a few days later, finger painting with the contents of his diaper onto my kitchen floor. This is new behavior for me, Jacob never messed with his poo. We are going to buy him his own potty chair SOON! Very soon.

I feel really good and anxious about this quarter as I started my practicum. I'm nervous but not too nervous as I do have some experience in this field. I just really feel I've lost a lot of brain cells while I've been off work these last few years but I will fake it til I make it, or just keep faking it really good.

My Tuesday night class is looking to be a royal pain in the rear (ok ok just because there is a presentation). So I will be working at my practicum site from 8-4:30 every Tuesday then trekking over to UWT for class from 6:30-9. I like that I have a bit of a gap in between to force me to do some reading.

Then I have practicum seminar 3 more times for 2 hours and more trainings for the Child Welfare Training and Advancement Program (CWTAP) on 2 Wednesdays. It really isn't that bad. I can so do this.


I've been keeping (loosely) a food journal which has morphed into a ranting unloading journal of everyday stresses and what not. Its quite cathartic. As of the other day I was down to 128lbs (15 more to go). But I made spaghetti for the kiddos last night and consumed at least 3 lbs of carbs plus we made homemade vegan banana muffins.


No sugar added stab at yummy muffins:
-2 ripe bananas blended with canned coconut milk
-Whole wheat pastry flour
-Baking soda
-Baking powder
-Applesauce


Yup that was it and now that I look at it, I realize I forgot the Apple Cider Vinegar DOH! I baked them up with vegan dark choc chips in the center. It really wasn't a sweet muffin but the kids DEVOURED THEM. Ollie had a great idea and he slathered on some PB and it was a meal. They had it this morning for breakfast along with a spirulina smoothie. Gosh I love my kiddos.

Pears and Cantaloupes

So I need to add to last night's food journal: I had a craving for broccoli. Broccoli tacos to be exact. All you do is saute some yummy broccoli and stuff into a warmed corn tortilla. I have mini-corn tortillas on hand. I need to get rid of them. I want to stuff EVERYTHING into them.



This mornings smoothie: Fresh and energizing

-Frozen banana
-1/2 cantaloupe
-Baby spinach
-Stevia
-Water

Lunch consisted of Gardein crumbles stuffed into warm corn tortillas with a smattering of guacamole. Delish. I wish I would have gotten a pic of Connor taking a bite of one, he thought it was hilarious to steal the whole thing from his mama.



Dinner smoothie:

-Banana
-Pear
-Chia seeds
-MSM
-Stevia
-Romaine lettuce

He who controls the Spice, controls the universe!

Sorry about the cheesy quote. I just had Dune on my brain. I'm a huge huge fan. However, I've been trying to plug away at Sisterhood of Dune and I'm pretty bored with it. What a bummer.

On to other things:

My eats:

  • Lemon water
  • Smoothie: Vanilla soymilk, frozen strawberries, banana, cinnamon, chia seeds, baby kale, and stevia
  • Crockpot curried red lentils served over raw chopped celery
  • 2 packs of guacamole (soo good, from Costco) with peach/mango salsa and some whole wheat tortilla chips
Tomorrow I am going to aim for ONLY smoothies. Fingers, toes, eyes, everything crossed. 

I came across this wonderful article by Gena of Choosing Raw.  I love her straightforward common sense approach to veganism. If you know me, you know I'm constantly struggling/striving to find the perfect balance and harmony for myself and my family. If you know me, you also know I have my side of the family as real sticklers for "meat eating as healthy." I could go on this long winded post about how tough it can be, especially when it comes to my kiddos. In a perfect world, eating vegan would be perfectly normal and desirable. I find it VERY desirable but not normal as I'm always having to make concessions or cause upset around my sisters and parents. But I digress, I don't have that much time for a valid enough of a blog post. I have a very cranky lil guy wanting my attention.

-Banana
-Avocado
-Frozen strawberries
-MSM powder
-Extra virgin coconut oil
-Stevia
-Almond butter (regrettably not raw)
-Romaine lettuce
-Mixed baby greens
-Water

21 Day Positive Green Juice Challenge

This challenge looks great! On the plus side, I usually have a green smoothie everyday so I've got this in the bag. ;)

I have T-minus 14 days and counting until the start of Summer quarter and my practicum. I have boxes and boxes of pre baby clothing screaming, nay BEGGING me to wear them. I still have 15 lbs to go and I know I can do this.
